Skirret makes a crown of slim, sweet, carrot-like roots. Plant in deep, well-drained soil in spring; harvest the roots in autumn after the tops die back, and replant the crown for next year. Yields vary from plant to plant, which is exactly why it disappeared from farms and stayed in gardens.
