Wine caps are the easiest outdoor mushroom to grow: a burgundy-capped, meaty mushroom that fruits straight out of wood-chip or straw mulch in a shady garden bed — the photos are our own patch coming up under the peonies. Once a bed is established it can fruit for several seasons.
The kit is sawdust spawn ready to mix into fresh hardwood chips or straw. Lay a 4–6 inch mulch bed in part to full shade, layer the spawn through it, water it in and keep it damp. First flushes usually appear the following spring or autumn. Harvest young, while the cap is still closed or just opening, and cook before eating.
