Slice into a scoop of Sorbet and you’ll understand why gardeners keep peonies for decades. This classic herbaceous peony (Paeonia lactiflora ‘Sorbet’) opens in late spring to early summer with large, layered blooms in blended shades of pink and cream — the kind of flowers that stop people mid-stride and fill a vase beautifully.
Plant your bare root in full sun to part sun in fertile, well-drained soil, and pay attention to depth: the eyes should sit no more than one to two inches below the surface. Too deep, and she’ll sulk instead of bloom. Expect a mature clump of 24–36 inches tall and wide, reliably hardy in USDA zones 3–8. Cut stems back to the ground after frost each fall, and let the plant do its quiet winter work.
Here’s the thing about peonies — they reward patience. Year three onward, the blooms get bigger, the clump gets fuller, and you’ll wonder why you didn’t plant more.
We ship bare root divisions in fall (September–November), the best window for strong establishment. Local pickup is available year-round at our Bellevue, WA location.
🍂 Shipping & planting window
Peonies ship in fall (September–November) when fully dormant and bare root. This is the only window we ship.
Fall planting gives roots a full season to establish in warm soil before winter. Cold stratification triggers strong, healthy spring growth and reliable bloom production. Spring-shipped peonies experience root damage during active growth, transplant shock during their bloom cycle, and often lose an entire growing season.
